how do i get them to believe me
this is so stupid but i bought a pack of shirts from tesco and it comes in a pack of 3 but there’s only 2 in it and i need to return it but will they just say that i took one out or will they let me return it

They don't usually ask many questions in my experience.

A lot of large retailers tend to err on the customers side for this sort of stuff, packing errors happen.
