Why do some schools get different texts but same exam board

For example for paper 2 AQA there are texts like Animal Farm, Blood brothers, Never Let Me Go etc. I was wondering why AQA has so many other texts but most people do Inspector calls, Jekyll and Hyde, Macbeth. I rarely see people who do anything else. Do separate schools get to choose which texts?
