History and Economics degree

I’m wanting to apply for a history and economics degree undergraduate, probably at Leeds or York. Is this a respectable degree and would I be able to go into an economic sector even though half the degree is history?
My A-levels are history, maths, further maths.

Respectable in what sense? History and economics are academic subjects. I can't see why they won't be respected.

Yes, although to become an economist (there is no such thing as the economic sector), you will likely be looking to do postgrad in economics. This should be fine if the economics portion of the degree has sufficient maths (which it should do considering it's from Leeds and York).

From the looks of Leeds's degree, it doesn't seem that mathematical since it doesn't ask for A Level Maths and it's taught by the history department: https://ahc.leeds.ac.uk/courses/202526/950/economics-and-history-ba

I would double check with how much maths you would need to cover in Leeds's degree. If it's insufficient, it might hold you back.
