I’m looking to do a Criminology/Criminal Law degree at University but I’m not sure what extracurricular activities they would favour that I could do over the summer.

Although I do not do criminology and do Psychology, you could do some reading around the topic as @McGinger suggests. This could help inspire some extra curricular activities. The other thing I would recommend doing is to find some work experience working with people face to face, this could be in a charity where you can help vulnerable individuals but this might be hard to find or secure due to paperwork or training that may need to be done. You could contact homelessness charities, mental health charities etc. I suggest this because it would show you have an understanding of people, something which may help when studying criminology/criminal law.

I hope this gives you an idea but do not hesitate to contact companies and organisations as the worst they can say is no!
