Usually, I make a simple stir-fry or pasta bake (the noodles and pasta don't go off, so I always have these). I also make enough for lunch the following day.

An 'English/cooked breakfast' is another go-to dinner, even though it's literally a breakfast!

If I am feeling extremely lazy, it has to be noodles.

The more you cook meals for yourself, the easier it gets. After a while, you don't even have to think; you just do it.

I would also agree that a full English is a great meal, however as there is a lot of components to that. I would say my struggle (in terms of ease and some cost) meals would be as follows:

Pesto pasta - just pasta and pesto out the jar, sometimes will add tomatoes and chicken.

Oven pizza - I find a bit expensive but you can find it reduced.

Bacon and egg or sausage bagels or as a sandwich.

Fried rice - usually with egg peas salmon and some soy sauce garlic etc all in one pan.

Beans on toast - or anything on toast, lots of people do this with jacket potatoes too.

Loaded fries - I have done this with chorizo and cheese, also once with just gravy.


I also make big portions when I cook things like chilli, bolognaise, curry, meatballs and soup and then freeze them which then makes it a really easy meal in the future, as you just have to heat them up in the pan. I think as you go on you will also just use what you have and come up with random easy meals.

I've got a couple! I would say that noodles with microwaved broccoli is my top one, but also just cheap oven-baked pizza from stores like Lidl. Easy but healthy meals I lie to do is just rice with (again) microwaved broccoli and chicken baked in an oven. Can't go wrong with that!

This is a great question!

My usual go-to meal is anything with pasta. I typically do pesto, tuna with tomato and mayo, butter and salt, spinach and feta, and lots of other combinations. The ingredients are usually pretty cheap and can last a long time if you store them appropriately.

Some other easy meals that I didn't do often (but I know many did and it worked for them) include oven pizzas, chips and chicken nuggets, fish fingers, and other quick oven meals.

Instead of pre-packaged oven meals, I'd usually do chicken, rice, and vegetables. It was cheap, easy to prepare, and healthy!

Another meal I enjoy making is my 'picky' dinners. It's usually just a charcuterie board of ingredients from the fridge and cupboards, most of which are cheap. This usually includes bread, cheese, meats/leftovers, tomatoes, carrots, celery, fruits, and other little bits you can throw together.

Hi!

I will 100% go for pasta as soon as I can't be bothered to cook properly; boil some pasta, pour some pasta sauce and call it a day is my main strategy. Cheesy beans on toast is another classic, once I didn't even have proper bread and just used a bagel which wasn't my proudest moment. Finally, if I really can't be bothered, cereal is my best friend 😄

I'd also agree that pasta or rice dishes are a super easy meal to make and this is something I'd cook often at uni due to it being a quick, cheap meal that I could have lots of different ways.

I also found chicken wraps a nice quick and easy go to meal for uni, I'd mainly have this for lunch or if I wasn't feeling super hungry later in the day. If I really didn't feel like cooking I'd just pick up some frozen pizzas which are a super easy meal when you don't feel like making anything.

Cereal!
Aside from this jollof rice (doesn't require many ingredients, quick to cook and rice in general is filling).
Baked potato (cheap, can just put in the oven and doesn't require much).

Protein and fibre will help you feel fuller for longer, so if you mean struggle meal in terms of finances, then definitely look for ways you can increase your protein and fibre intake without having to spend loads e.g. popcorn (high in fibre buy popcorn kernels instead of popped popcorn), peanut butter, tinned oily fish and beans.

If you mean struggle in terms of being tired and not feeling like cooking, then frozen chips or anything that you can just bung in the oven works well!

My go-to uni struggle meal has to be homemade pizza using ready pizza dough from Lidl or Tesco. It is super easy and fun to make! I just top it with whatever I have on hand - usually some pasta sauce, shredded cheese, and whatever veggies or meats I can find in the fridge. It is quick, cheap, and way more satisfying than takeout.

Another favorite of mine is pasta with my favorite toppings. I cook up some pasta, toss it with olive oil or tomato sauce, and add in toppings like garlic, cherry tomatoes, spinach, and some grated cheese. Sometimes I even throw in some leftover meat for extra protein.

When I am feeling super lazy, I head straight to De Montfort University's Food Village. They have an amazing variety of breakfast and lunch options that taste incredible and are super affordable. Their meals have saved me countless times without emptying my wallet!

I typically go to Morrisons and look at yellow stickers around 6pm when they do their final reductions. You can get some brilliant deals. I normally find myself with a pizza or some fish.

My go to meal would be pasta for sure! Pasta is a cheap ingredient that can be stored for a long time and be made into many different meals. Frozen veg with rice is also a good option for a quick and cheap meal.

Looking at yellow stickers to is a good hack as you can freeze most things including ready meals.

I generally make something pretty simple like a spaghetti bolognese or a chicken pasta. As I can make lots of this and store it in the fridge for when I'm busy in the week.

As the year has gone on my cooking skills have grown in confidence, and I have been able to cook more complex meals.

I'd say my go to easy meals are pasta bake, stir fry and fajitas. Pasta, nice and noodle meals are a good go to as they can store in a cupboard for ages and can be paired simply with a sauce.
