Salmonella, staphylococcus and streptococcus. The cockroach can also harbour viruses such as the polio virus.

They vomit/defecate on food. If people then eat that food then they can get ill from it. I don't know much more than that.

It's because cockroaches can ingest bacteria, which stays in their stomachs for months even years. So that's how they carry illnesses in the first place.
