I want to apply to PBS at Cambridge, however am predicted only A*A*B (or less) and do not study Biology or Maths at A-level, but was awarded highly in them at GCSE.
I'm going to write an EPQ on psychology.
Should I potentially give up on going to Cambridge to study PBS? I worry I'll be disappointed.

No. Work hard to improve your grades. Get 1 or 2 supercurriculars.

What do you mean by 'get supercurriculars'? As in do them?
If so, I'm getting work experience with an NHS psychologist and am already reading non-stop about psychology topics.
And if that is sufficient, what else could I look to do?

Those are good supercurriculars. Improve your grades. Good luck

Biology or Maths is a hard requirement. You won't even be interviewed as you don't meet the subject requirements.
