Yes, you can do a master's in psychology (at least in the UK), but you would likely require to do a conversion master's before doing any further postgrad degrees in psychology. Your undergrad in paramedicine would not help you in your application for a psychology degree, hence why you would need to do a conversion course first.

The career you have would depend on who employs you. You can have all the qualifications in the world, but if you can't be employed by anyone, it won't mean a thing.
Also, a degree doesn't guarantee or entitle you to a job, ever. If you believe otherwise, then you have been severely misinformed.

If your degrees are BPS accredited, you can move onto do doctorates in clinical psychology to become a clinical psychologist. Otherwise, you can be a mental wellbeing practitioner in the UK. Outside of psychology, you can go for jobs that ask for either a degree in any subject or requires no degree at all (at least in the UK).
There are approximately 600 careers that you can go into (assuming you are accepted) with a degree in any subject. I am not going to list them all out and I am not going to entertain the idea.

If you don't intend to work in the UK or don't live in the UK, then it would depend on the requirements of the country that you're based in. As you did not specify this, I have no clue where to begin. I would also not entertain the idea of listing out all the job requirements for every job in every country, especially without the use of AI or a powerful LLM and a comprehensive database.
