Option 1 has a fantastic display and a decent amount of graphics horsepower, but no touchscreen. Option 2 has a touchscreen and graphics card, but is smaller than you want. Option 3 has a touchscreen in the size you want, but is significantly less powerful than the previous twin options. Nothing is going to be perfect for what you need while you have the constraints of the 15" touchscreen without spending extra money. I'd personally opt for one of the first two options and supplement them with either a drawing tablet with the first option for the art, or an exterior monitor for extra screen real estate with the second one.
