Is it better to go do stem subject in uni like QM or apply to course like data science , management, social policy or geography at unis like LSE , kings , imperial bc it’s a better uni even though I don’t enjoy what I would be doing

It's always better to pick the course you'll enjoy over a "better" uni. You'll be studying it, and (almost) nothing else, for three years. Spending three years studying something you don't enjoy is hard.

I’m just constantly seeing these pl from like schools such as Brampton manor applying to these courses and makes me wonder how they are so sure on what they want to do hence chose undergraduate to be this specific like let say I wanna do maths should I apply to LSE for accounting and finance instead of maths or actuarial science bc I have higher chance

As I've already said, pick a course you'll enjoy. Don't pick a course you won't enjoy just because you think it might be less competitive to gain entry.

What would be the point? You'll spend three years studying a course you don't enjoy, which will lead to a career you don't want. Just for the "kudos" of attending a particular uni? No thanks.

Everyone is different. Some people are absolutely certain from an early age about what they want to do for the rest of their lives. Most people aren’t and will pick the best of the options in front of them and keep trying things to find what suits them best.
