Talk to teachers and counselors for guidance, and remember that there's no wrong choice as long as it aligns with your passions and interests.
I would advise maths as that is the most useful in terms of mandatory for loads of uni choices. Of the 3 options you mentioned, econ is probs the easiest. History might be better if you wanna do law.

By the way, not all universities require chemistry for medicine. You could still do Maths, Biology, and any other subject if you still wanted to do Medicine. Some require only Biology.

It depends on the grades you got. Many universities dont require Chemistry, Look at the medicine forum and you will see the requirements for different universities and choose those that dont require Chemistry.
