When do I need to declare my income?

So apparently the Personal Allowance is £12,000 in the UK so anyone with a salary of under this doesn't have to pay tax.

But what if I helped out in a family member's firm/shop and they simply "gave" me money in return? For example if they owned a cafe and I was a waiter on Saturdays, or if they were self-employed window cleaners and I simply came along and helped? Could it legally count as me helping out and them giving me picket money lol.

Or for example if I was self-employed and was hired to play the violin at a wedding, or offered beginner lessons?

I don't want to do something illegal by not declaring income even if it is completely part-time and self-employed. Can anyone tell me what the rules are about these different kinds of scenarios.
For reference I'm 18+.

Or for example if I made some money by filling out surveys (probably not a lot but for arguments' sake let's assume it was over £1000 a year).
