My school guidance counsellor would not let me submit my UCAS personal statement without my first paragraph mentioning that I take the IB and that my higher-level subjects are Maths, Physics and Chemistry. However, advices on the Internet are against including that in the PS as most applicants already take those subjects, and including so also reduces other supercirrcicular activies I can mention. What should I do?

You can agree to it and then change it when you submit your application unless they submit it for you.
