Biology Chemistry Economic A levels

Are these 3 a levels a good combination and do they have a good variety of paths?
They're fine.

You could go into the vast majority of bioscience degrees, many healthcare professions and similar degrees (including medicine, vet med, dentistry), and any degrees without specific entry requirements (i.e. most humanities and social science courses).

Bear in mind though without A-level Maths you would not be able to apply to most economics courses, most CS courses except with a foundation year, or most engineering or physical sciences courses without a foundation year. You may also be less competitive for a few natural sciences courses or biochemistry courses.

Assuming those types of courses aren't of interest though it's a perfectly good combination for a huge range of other courses

It's neither better nor worse - wouldn't make a difference in either case

would psychology give me more opportunities?

No, it would still give you the same options for degrees and such. So just take whichever of the two you prefer
