How do I show my further reading in my personal statement

I need to submit one of the drafts of my personal statement soon but I haven’t been able to make much progress when it comes to extra-curricular activities.

For reference, I want to study Cybersecurity, and I’ve read ‘Security Engineering’ by Ross Anderson’s, ‘Art of Human Deception’ by Kevin Mitnick, I keep up with Cybersecurity news, I have done some Hack the Box and Try Hack Me tutorials, and an introductory course on Coursera

State that you've read it.
Say what you found interesting and why.
Say what you wanted to learn more about based on that.
Talk about what you then did to learn more about that thing.
Then indicate what you would like to learn about in the future, at university - connected to those things.

That's a paragraph.
Then repeat.
