I personally would suggest epq as I feel it's better preparation for uni (and gives you an opportunity to research a subject you might be interested in) plus an AS in law is unlikely to give you any real advantage I uni application (and that advantage could be gain by doing an epq).
Also an epq shouldn't be an 'insane workload', only a couple of hours a week as you have loads of time to complete it!
