What to do abour predicted grades

I was writing my personal statement when I realised that my mock exam grades from year 12 will be my predicted grades for university applications. The grades I got in my year 12 mocks were BCC. I have had all of my subject teachers tell me that grades improve with time and that we shouldn't worry about our grades since we are not at our peak yet especially considering that all of my subjects are essay-based. In reality, I would like to be achieving ABB which I really believe I can achieve as I'm at the top end of my grades in every subject.

I'm really struggling to think about what to do because we are submitting university applications soon and there is zero chance I will get into some of the universities that I am aiming for with these grades. Any help would be amazing, thanks!

As you teacher has said, "grades improve with time", so it's unlikely that they'll directly use your Year 12 mock grades as your actual predicted grades. It's more likely they they'll use them as the basis for making their predictions - for example, by assuming a one grade uplift per subject (or perhaps only doing that if you're near the top of your existing grade).

Have you asked your school what grades they'll predict for you? (You say, "I realised that my mock exam grades from year 12 will be my predicted grades". The use of the word "realised" suggests that this might be an assumption on your part.)
As above, talk to your teachers and/or the 'UCAS person' at your school - don't just assume.
