Best student recipes?

Hey guys I'm moving away for university soon and would really appreciate some help for cooking, so could you drop your best recipes for me please??
Im not at uni but i enjoy making peanut butter noodles. Basically you get peanut butter and soy sauce and microwave them for like 30 secs and then add milk to make the sauce. Then you add noodles (they only take about 5 mins to cook in a pan) and tinned sweetcorn plus grated carrot (you could add other veggies if you like) and some chicken (leftovers work well) and stir it up 🙂

Tagliatelle, bacon, mushrooms and pesto; delicious.
Cod fillet, new potatoes drizzled in a little olive oil and finished with some green veg and piccolo tomatoes; yummy.

I could go on, lol.

Learn how to make basic pasta sauces and curry sauce bases such as korma, tomato base etc.

Then you can add any meat or vegetables that you have with some pasta or rice. It's much cheaper to make sauces yourself. Also, I freeze portions of pasta sauce so that I can make pasta quickly just be melting it on the hob.

Also, jacket potatoes. If you have a good potato, they are very satisfying.

I recommend asking any family or friends their favourite meals, learn how to make them and write down the recipe. When you get to uni, you could make big batches (as it is hard to make single portions of curries etc in my opinion), and freeze them along with portions of cooked rice. Defrost them and heat them in the microwave. Rice microwaved from frozen has a very different texture, which I don't enjoy.That is dinner in 10 minutes. I haven't tried freezing pasta, I think the texture changes too much.

I know a good pasta recipe:

Boil penne in a pot with water first, add garlic cloves, cherry tonatoes, basil and olive oil in a baking dish and feta cheese in the middle. When the noodles (penne) are al dente, add them to the baking dish
and let it cook in an oven for 40 minutes. Take a Spoon and mix all the ingredients in the baking dish and your food is done. If it is sour in taste, add abd mix heavy cream.

I've taught so many students how to cook - I'm a mature student who's been cooking for like 45 years - and I always recommend students learn 10 cooking things before moving out of home and into your own place:

A simple pasta dish

A simple mince dish (or mince alternative for veggie folk)

A simple stew

A simple soup

A simple bake

and 5 things to do with eggs


So, here goes (deep breath)

Simple Pasta
Cook pasta till it's edible - remember to add salt to the water, more than you initially think
When it's just about done, fry some chopped garlic or garlic paste gently in some butter and grate some Parmesan cheese, like a handful
Drain the pasta, toss it in the garlic butter, and add the cheese and salt and pepper to taste
Done - you can make it 'more' by adding more - chopped spring onions in with the cheese, or fry off some baby tomatoes with the garlic, add some herbs, prawns if you're feeling flush, diced ham, pepperoni, those cheap meatballs from the chiller in the corner shop - it's a world of choice!

Simple Mince
Fry chopped onions a bit in some oil
Fry mince till it's cooked
Add a stock cube and a little water to make a loose gravy, if you want it thick, put a tablespoon of flour in with the mince when you fry it
Done - if you season it with salt and pepper it's perfectly edible as is, though plain - stick mashed potato on top and a little cheese and it's a cottage pie. Add a tin of tomatoes, tomato puree, garlic and mixed herbs and it's spag bol. Replace the herbs with chilli and add kidney beans and it's a chilli - you can do a lot with it

Simple Stew
Fry chopped onions in a little oil
Add some meat and fry that a bit
Add some vegetables and potatoes
Add some water and a stock cube or 2
Cook till everything is generally soft
Done - Add curry powder and it's a basic curry. Add Moroccan spice mix and chick peas and it's a basic tagine (chick peas are good in the curry too - and other things tbh, it's a cheap protein source and bulks stuff out a lot). Add cajun spice and chopped sausage and it's a vague approximation of gumbo (gumbo is THE BEST when done properly, but this'll do as a starving student)

Basic Soup
Fry onions in a little oil
Add a ton of chopped up vegetables
Add water and 3 stock cubes per litre of water
Cook till everything is soft
Done - what vegetables? any vegetables (maybe not salad ones lol). Add red lentils for bulk. Blend if you've got a blender, if not it's fine as is. Serve with bread, maybe drop some grated cheese in your bowl with it so it goes all melted and stretchy, or some spring onion, or fried bacon bits...you can do A LOT, it's hard to mess up soup - if it's hot, soft, tasty and in a bowl, you're good

Simple Bake

No notes, it's great - and you can add pretty much any biscuits, dried fruit, etc you like to it, it hits the 'chocolate fix' HARD!

Eggs
No individual recipes here, how to cook eggs is really googlable - but learn to do fried eggs, scrambled eggs, hard boiled eggs for sandwiches or salads, a basic omelette, and if you're feeling advanced, poached eggs - they're not as hard as you think, and are great on toast

Get these recipes/ideas down and you can do a whole bunch just by adding stuff to them - they're flexible enough to accompany or make use of whatever is in the reduced section of ASDA, and they are way more healthy and better value than living of noodles or frozen stuff

Taco! Cook ground beef with taco seasoning, then spoon it into warmed taco shells. Top with shredded lettuce, diced tomatoes, cheese, and a dollop of sour cream. Enjoy!
