Hmmmm that's tough. I applied for a mixture of maths and physics courses, and writing a personal statement that blended both was very stressful. I would say to mention various bits of each course that you like (but without naming a specific course from a specific uni, just mention the general area e.g. I'm really interested in occupational therapy because ...), and try to find some similarities or overlapping areas that you can talk about in more detail. So for me, since I was applying for maths and physics, I talked a fair amount about theoretical physics (and it also helps that physics is quite mathematical anyways). I'm assuming you've gone to university subject tasters and worked out what it is that you want to do, and I suppose the courses you're applying for are at least a little similar... if they are completely different, then I would suggest narrowing down your interest to a more specific area... then it will become easier to tailor your personal statement.
