Why does evaporation occur from leaves even though its not boiling temperature, is the water vapour just how photosynthesis produces water, not as a liquid? Why is that?

Photosynthesis does produce liquid water. However, water doesn't necessarily need to be boiled to evaporate. Water can obtain heat energy from the environment, which provides water molecules with enough kinetic energy to escape into the air and evaporate. While this is very little energy, it's enough to evaporate the very little water in the leaves. Once evaporated, the water vapour can diffuse out through the stomata due to the concentration gradient with the air.
