Current second year student in the law school so quite different to anthropology, but I can do my best to answer!
Living in Edinburgh is great, it's definitely a lot more expensive than some other cities but I really enjoy it! The uni has lots of amazing resources across departments, and all accommodation options are within a good distance of the main campus - I was in one of the 'further out' options, and was still only 15-20 mins away by bus. Some accommodations are literally a 1-2 min walk. I've found all my tutors and lecturers to be really helpful on a personal basis and they're always quite good about answering emails and questions and stuff, but one thing I will say is the university administration isn't always the most organised. This is never detrimental as things do get fixed, it's just sometimes inconvenient for students and a bit inconvenient obviously!
In terms of electives, you will have a set amount of credits you have to fill with elective options. You're able to try things from most different schools (excluding classes that are closed off only to students of that degree, which it'll say in the course information) and while I don't have this experience personally (as in law we don't have too many elective credits + we tend to take law-based electives lol) I know friends who have taken a whole range of courses entirely unrelated to their degree and really enjoyed it. You can see just how many elective credits you'll have in each year by going to your degree page on the UoE website then to "What you will study" and then the "Programme Structure" link.
Offer holder events tend to be announced closer to the time (when more people have offers of course) but if I remember right, most of the ones I was aware of were in April/May!
