I am so confused right now, idk whether to go to Warwick or university of Birmingham, I been to both unis and honestly feel the same about them. Anyone have any advice on which one is better for employability/teaching or what should I choose
Both are equally as good in terms of employment prospects. The real choice is whether you want to live in Coventry or Birmingham? I would choose Birmingham personally because Coventry is a ghost town, but that's just me.

They're both pretty equal in terms of reputation and employment prospects, Warwick does rank as a better university overall but is not really a huge brand name outside the UK.
What exactly are you looking for? I could care less about brand names and turned down UCL and Durham for Nottingham. I don't see the point because all the Russell group unis are well known and outside of the UK it's only Oxbridge, LSE or possibly Imperial who would get recognised by international employers. However, top employers in the UK prefer to recruit from Nottingham: https://warwick.ac.uk/fac/sci/statistics/highfliers-graduate-market-report-2024.pdf

It says Birmingham is first, I think that does it for me as I just wanted to go to the uni with higher graduate prospects, do these ranking change every year or remain the same usually year by year?

Ignore all rankings and league tables, they are all nonsense. Employers recruit people, not universities. Birmingham and Warwick are both good places to study law.
Warwick is only 1 or 2 spots below so I wouldn't base my decision on this, it's just that Birmingham is a big school so many recruiters would target it. That's why unis like Oxford and Cambridge which are obviously better for prospects would rank lower on these lists. Birmingham has 10,000 more students than Warwick so in comparison Warwick is holding up its weight pretty well.

For Law there is no difference in the quality of the courses at Birmingham or Warwick. As universities Warwick edges Birmingham for overall reputation, and is widely regarded as a top 10 UK university, although Warwick has a great reputation mainly for STEM courses, and not so much for others. Warwick has a more competitive student culture, as students are ranked against one another in their courses. I would choose Warwick over Birmingham for a academic reputation, but Birmingham has the more beautiful campus, and it isn't a clear cut decision. Birmingham has closed the gap on Warwick in the global rankings in the last 10 years. There was a time in the 90s and 00s when Warwick was seen as significantly more prestigious than Birmingham, but that has gradually changed.
I wouldn't put too much weighting on the graduate prospects rankings issues by High Fliers Research, as these change significantly over time, and not all of the employers covered in their research are prestigious companies.
