I want to study French and Spanish (both post-A-level) but know already that I have a preference for Spanish. I know the first year is quite rigid in terms of modules studied but would I be able to spend more credits on Spanish in subsequent years?

Cambridge doesn't have 'credits' like a lot of unis but you do take 5 or 6 papers each year. First year as you say is very rigid; second year you have language papers in both languages and then a pretty free choice of three further papers on cultural topics (or you can 'borrow' papers from subjects like linguistics or history).
For the year abroad, you have the option of splitting it between the two languages or focusing on a single language in a single country and e.g. spending your whole year in Spain if you wanted. Regardless, it's then very normal for people to focus on a single language in the final year, where you only have to do one set of language papers.
