According to the Uni of Edi’s entry requirements for their Medicine course, you must achieve Higher Chem, Biology and Maths/Physics in S5. You unfortunately have only one of these subjects, meaning it isn’t likely they will look at your offer. That’s not to say that I am completely right, I would suggest contacting admissions teams of the unis you want to apply to and asking them. Keep in mind that your workload in S6 would then be huge, if you achieve the required S5 grades.
Also, if your grades aren’t applicable, you could apply to Gateway to Medicine courses

If it's Chem, Biology, Maths by the end of S6, I do apologise - I must have read the entry requirements wrong. You can still apply, but it would be in S6 during Advanced Highers.
I wish you the best )

Consider how you perform in your upcoming higher prelims carefully, if you aren't achieving all A's or at least high B's you might want to reconsider, as crashing subjects will be even harder.
The UCAT is needed to get into medicine and if you struggle to achieve in school subjects, I can't imagine it will go too well.
This is not to say that you can't do it and I wish you the best of luck in all that you go on to do and I do hope that you will get in. 😁👍️

Don't know if you'll have an answer to this, and where I'll be applying doesn't care about personal statement that much, but is there any key buzz words that you should put in your personal statement that the examiner would look for? Not really expecting an answer so it's fine if you don't have one. 👍️
