Gap Year Internships and Work Experience THAT ARENT 6/12 MONTHS LONG OR 40 HRS/WEEK!
I am really struggling to find short but immersive online/in-person internships on my gap year. As I'm sitting Maths A-Level alone, it would be nice to have a job/internship that isn't too demanding or strenuous. Would prefer those that are in economics, politics or tech but am not picky. Does anyone have any suggestions given the fact the new year is coming around the corner?

Work experience is work experience, and the working day is routinely 0900-1700 or thereabouts. I'm afraid you ARE being picky as far as employers are concerned.
If you want serious, CV-worth work experience, then you are going to have to juggle your studying around it at weekends and evenings - that's the real experience of work for most people.
