One pot meals like chicken stews, vegetable soups and pastas are simple and cosy to make, especially in the winter. In a single pot, throw in any leftover vegetables, along with canned beans/ legumes and a chicken leg to cook for about 30-40mins (on low heat with the lid on). Stews are one of my favourite things to make as they are easily customisable with whatever ingredients you have on hand + you can easily get on with other things while waiting for everything to simmer. It is also easy to portion out and freeze the stew so you can have it throughout the week!
