Allow me to share my favourite budget-friendly meal from my uni days: Vegan Chickpea Biriyani. Needs:
Chickpeas - 40p
Rice - £1.40
Peas - £1.00
Onions ~ £1/kg
Broccoli - 85p
Turmeric - £1.00
Garam Masala spice mix - £1.00
Altogether this comes to £6.65 and you'll have loads of spare ingredients left over to use for other things (rice, spices, peas, veg, chickpeas). Its vegan, fun and easy to make and tastes lovely too. Its also good for nights when you're cooking with a friend or family.
Simply cook the veg and chickpeas in a pan with the spices, then towards the end add in the cooked rice, stir it and heat it up, leave it for 2 minutes to steam then serve.
