also for high skill dishes a lot of people in my class did a chicken caesar salad where you debone the chicken and julienne the veg, fish tacos, pasta e.g. raviolo, fruit cheesecake or using dark choclate to try make desserts healthier!

omgg yed thank you so much do you have any suggestions for high level skill foods that don’t involve meat because i’m quite scared to debone chicken and fillet fishes😭

ugh understandable!! i think pastas a good one as it is a high level skill using the machine. lasagne contains meat with the mince but obviously you don’t have to debone it. making pastry is a a great so you could do like a vegetable tart. or a pizza is a great one peoole did obesity as you can make it healthier and serve with a salad. the aqa website also have high level dishes! hope this helps! :smile:

that’s ok! yes that sounds great- making pastry is a high level skill and it fits the brief with fruit and almonds staying relatively healthy so sounds good!

hey guys i’m just starting my nea2 and wasn’t sure what brief to do and didn’t know if anyone had any ideas x

I am in the same boat. My teacher told me that doing the lactose/gluten free one would have more skills. So I am making a soup and gf bread starter, a pasta and meatballs with buffalo sauce main, and gf cookies with some sort of gooey thing inside for dessert. Obviously ensuring it is all lactose/gluten free is tricky. But with the soup one you would have to include a bread a croutons not only for presentation for for skills marks aswell as soup is pretty much free of gluten and lactose anyway.

what did your school do for NEA 1? mine did how do different parts of the recipie affect the scone. OMG it was so long and boring but got it done. I chose to investigate different typrs of flour, fats and raising agents

sorry for the long reply haha. we did the same one it was genuinely the most boring thing making scones every single lesson and i did the same investigations actually! for the fat one we used lard for one and it was rank .
