Nope, you can apply from anywhere between 1-5 courses. There's no point adding ones which you wouldn't want to attend.

It really depends on the University and the course, in how they process the applicants. It can be days to months

As above, it can vary wildly from within the same week to a few months. If you apply before the Jan deadline, you will hear back before the 14th of May.
