I'm about to finish my Law with Chinese degree, does anybody have any recommendations for jobs for foreigners going to China, outside of english teaching jobs.

Have a look at Zhong Lun, KWM, and other large Chinese law firms.

Are you focused on mainland China, or would you go to Hong Kong? What about the wider Sinosphere, for example Singapore? Taiwan is probably not a long term option as the PRC may take over Taiwan in the near future, now that Trump is returning to the White House.

Working in the law in a polity that doesn't have the rule of law is challenging. In China, the law is whatever the CCP says it is, and Chinese courts are not independent of the government. In Hong Kong, the criminal courts are no longer independent. The commercial courts are independent up to a point, as in Singapore. How the Hong Kong civil courts would decide in a case involving PRC interests remains to be seen.

You can use Chinese language skills in the offshore legal industry in China, HK, Singapore, and by practising BVI and Cayman law (which you can do from anywhere, London, Dubai, and Abu Dhabi included). Chinese businesses are big customers of BVI and Cayman legal services.
