Do I have a chance for Maths and cs with a personal statement tailored to just cs?

Initially, I decided to apply for a straight computer science degree. However, I'm now considering picking a joint degree in maths and computer science. My personal statement specifically mentions computer science concepts and was wondering if I would be disadvantaged when applying for maths and cs. My predicted grades are AAA so I'm preferably looking at Russell Group unis.

Just one or two. One is cs with maths and the other would be cs with AI.

Ring up those universities today and ask them.

As above - check with each Uni by phone (emails take too long to be answered at this time of year).
Some Unis will allow you to submit a separate PS directly to them, and some no longer read PS at all, so always worth checking.
