I've no idea what they "tend to have" in Clearing, but Leeds didn't place Accounting and Finance into Clearing last year. Sorry.

A&F is a competitive course at all top Unis, and that is why Leeds requires AAA. This also means they will not have not needed to put it into to Clearing in previous years to fill the course with applicants with lower grades. You can phone them on Results Day to check, but its unlikely.
Did they have natural sciences in clearing last year?
Yes. Both Natural Sciences BSc (BCF1) and Natural Sciences MNatSci (BCF0) were in Clearing last year for UK and International applicants, although I've no idea how many places were available. Note that this does not mean that either will be in Clearing this year.

if i go through clearing in leeds for one course, can i then switch courses early on provided i have the correct original entry requirement. im thinking of doing this for geography if leeds have spaces for clearing then switching to geo and econ if the uni allows me. I havent applied to Leeds.

There's almost no chance whatsoever they would consider this kind of swap. Econ will be fully subscribed (and ideally slightly oversubscribed to start with) and they will be very familiar with people trying to get onto a competitive course after enrolling on something else via clearing.
