IT? Do you mean computer science?

Look at the entry requirements for Economics etc on a wide range of Uni websites.
Economics Degree (BSc) - University of Birmingham
BAEcon Economics and Politics (2025 entry) | The University of Manchester
Politics, Philosophy and Economics BA | Undergraduate study | Loughborough University

Just be aware that any Economics or Politics degree is an academic degree - not a 'how to be a politician' training course, and those working in all levels of government or politics will have degrees in a very wide range of degree subjects.

Yes

As McGinger as correctly pointed out, have a look at the entry requirements to get a better idea of what would be needed.
