There's 2 main types of Psychology degree - BA (Bachelor of Arts) and BSc (Bachelor of Science). A BA is more of an essay based subject and focuses on writing, and a BSc is more scientific/mathematical, and focuses on the science of psychology. Of course both a BA and BSc will have elements of essays and science, but they are slightly different, and it's worth considering which you'd prefer.
At GCSE, it's not too important tbh, but if your school offers GCSE Psychology you might as well take it. If not, I wouldn't worry - A level choices are more important.
At A level, if you're more interested in the essay side of psychology, a good choice would be Psychology, as well as 2 other essay subjects e.g. English (any), History, Economics, etc. If you prefer the science side, then Biology (or another science) and maybe Maths would go well with A level Psychology.
The options you've stated are probably ok for some universities, but more selective unis may not consider them academic enough - it's up to you to decide what type of university you're aiming for.
