If you’re dead set on a beach then Crete is probably you’re best bet, has good nightlife too and decently cheap.
If you’re looking for more of a city, Prague is lovely and very safe, not much of a beach tho only lake beaches but loads of hotels have pools. Loads of stuff to do in Prague too.
