Does where you volunteer matter?

Like, is volunteering at a charity shop (e.g Sense) seen as worse than volunteering at a hospital?

I'd prefer to volunteer at a shop, as I see it as an easier commitment and I am a bit nervous around people, so shop volunteering is already a big step...

Basically 'It depends'

If you were keen on a career in health then yeah getting specific experience on your CV likely helps a bit, but the main thing is really just that you gain transferrable employment skills from it, and a shop has tons of them, customer service, cash handling, inventory management, health & safety awareness (even if it's just keeping the place tidy)
