Apprenticeship Advice

I left an apprenticeship around 6 months ago have been working in retail since, does anybody have any advice for applying for a new apprenticeship in a different area? Will it look bad that I left an apprenticeship previously, is it maybe worth removing it from my CV and just changing my dates in the retail job?
I do feel that the last apprentice which was in travel I learnt things that would help me in a admin apprenticeship but I just don’t want not finishing it to disadvantage me
Also, if I did remove it from CV will they be able to see that I previously started one if they hire me?
