would I be able to do an architecture degree with maths, psychology and english lit lang, and what would people recommend for their art portfolio (methods, opportunities etc)?

You can absolutely still apply with these subjects, as the majority of UK universities don't require specific subjects. This is the spreadsheet kindly provided by @normaw : https://www.thestudentroom.co.uk/showthread.php?t=7536742

Depending on where you're based, what year you're in and what kind of eligibility criteria you meet, there are definitely architecture opportunities run by different charities that you can engage in (eg Sutton Trust). Alternatively, ask local architecture firms for work experience or attend virtual work experience sessions on places like speakersforschools.

For art portfolios, you'll find plenty of advice on the student room forums. General advice would be to set enough time aside to do work in your own time to add to your portfolio. Focus on what each uni requires and demonstrate creativity, visualisation skills, research/exploratory skills and individuality. Use a range of media (eg charcoal, photography depending on the uni, watercolours, etc) and don't solely focus on including buildings - they don't want to see this unless you have a unique take on it, as they can teach you how to draw buildings just fine on the course. Try urban sketches and keep a sketchbook on you to draw anything of interest in your surroundings.

If you feel like you might not be ready to apply to uni straight away because you're not as confident in your drawing skills, you can attend a Foundation Diploma in Art and Design course at a local college/ uni - I got in UAL FAD and it suits some people.

Good luck and if you need any help/ advice, feel free to ask!
