With those grades (don’t quote me on this), I think that you’ll be able to apply to most universities. Are there any specific universities that you’re interested in and have you checked the entry requirements for those universities?
You can be risky with your choices with those grades/subjects for maths. The best unis for maths are considered to be COWI (Cambridge, Oxford, Warwick and Imperial) though of course there are many other excellent unis for maths outside of this such as UCL, Bath and numerous others

'Best' is subjective and I'd avoid Imperial these days.
Unsure really how high to aim, want to save myself from embarrassment of something like 5 rejections. And want to balance my safeties and the quality of education they provide. Predicted A*A*A*A* In maths, FM, chem and geology GCSEs: 988887775 Doing well in admissions test practice so sort of 80%+ but I think I have time to get this up more. Obviously my GCSEs and subject choice probably bring it down quite a lot, assume physics is all but required at a lot of places but it’s difficult to find stats on this. And help would be greatly appreciated!!

Maths degrees vary enormously so I'd look at a few to get an idea about the variation in content and assessment.
Don't assume RG is best as it doesn't guarantee good teaching. For example Bath is better than Bristol.
