for analysing quotes, make sure you identify any techniques used and analyse why they were used, as well as zooming into specific words and analysing them. its also good to link your analysis to wider themes/motifs in the texts if relevent.
To structure an essay, I like to do an intro, 3 paragraphs, and a conclusion. The introduction is quite short, usually only 3 sentences that give an overview of your points and how it links to the question. A tip for intro's to get some extra marks is to state what type of text each text is when introducing it, and state the author's name. Eg "in Shakespeare's tragedy 'macbeth", or "in Conan Doyle's 19th century detective novel 'sign of four'". For the paragraphs, I'd often order the points chronologically to show a progression through the play. the conclusion just summarise everything like in the into basically.
For poetry comparison, I liked to do 3 competitive paragraphs each comparing how each author presents an idea or uses a technique. for example, I'd compare how the different poets used extended metaphor for one paragraph, or compare how they used imagery. But my teachers also said the comparing the start, middle, and end of each poem also works well.

It would be helpful to see one of your essays to give more specific tips if you'd want. hope this helps
