Is it possible to change Degree after Foundation.
Hello I got an offer letter from MMU a foundation year with software engineering so I want to know that is It possible to change degrees after foundation year to AI and data science.

What is the full name of the course for which you have an offer? The reason I ask is that MMU have a course called "Science and Engineering with a foundation year (Computing and Mathematics route)" for which they say here, "...you can progress on to one of the relevant BSc (Hons) degrees:
BSc (Hons) AI and Data Science
BSc (Hons) Cyber Security
BSc (Hons) Computer Animation and Visual Effects
BSc (Hons) Computer Games Development
BSc (Hons) Computer Science
BSc (Hons) Mathematics
BSc (Hons) Software Engineering"

Actually, I think I've found your course now. Is it "BSc (Hons) Software Engineering with foundation year"?
If so, then there is no automatic right to switch course at the end of the foundation year. Note what they say here about degree courses with a foundation year: "Once you have passed the foundation year you will progress directly onto Year 1 of the linked honours degree." Note the use of the word "the".
As a result, you'd need to reply upon a formal transfer. You can find more details about that process here.
Unfortunately, I haven't been able to locate any details as to what's taught in year 0 of BSc (Hons) Software Engineering with foundation year, so can't comment as to whether it would be easy to switch to BSc (Hons) AI and Data Science from it.
