Getting engaged according to Islamic Sharia Law

Hope I find you all in good spirits. Long story short, I fell in love with a Swedish woman. I am 29 and she's 27. She also is very much in love with me. I explained to her that I can be with her if we're married based on Islamic Sharia Law. I explained Islam, the teachings, existence of God, the Quran and its miracles. She was convinced, not for me, but for the mere fact that these are true. We've decided to get married. We live in Edinburgh. I still haven't been able to find someone to marry us off as most of the mosques I've checked do not do islamic marriage only but the while marriage process according to uk law which is a quite lengthy process. We still haven't made a concrete plan of how to move forward and what are the things we need to get done. I really need some advice. We both work and our jobs are very demanding. She has an office job and I am a manager at a restaurant so our schedules make it really difficult to meet. I am very stressed out about this. I would appreciate some guidance.
