maybe volunteer at a nursing home or shadow someone working in a finance office.

You can try any care homes, maybe see if your local hospital has any volunteer vacancies available helping out on the hospital wards as you help patients with certain things.

If you have spare time at weekends perhaps apply for a part-time job working as a HCA nurse in your local hospital and gain vital healthcare experience.

These are academic not vocational degree courses so you don't need work experience. Your supercurriculars should focus on wider reading, MOOCs, podcasts, etc. related to the subject(s). In your personal statement, you will need to analyse/reflect on something that interests you - don't just list everything you have read/listened to.
