If optom is your dream course and you know what you need to do to get in next year, then take another gap year and use it wisely. There is no point taking a course that you don't really want to study as there is a high risk that you will drop out.

If you want to become an optometrist, you will need to do MOptom. It's a regulated profession and you need a very specific degree accredited by the professional body in order to qualify. Doing any other degree or one that isn't accredited by the optometrist professional body in the UK won't get you the job.

If they didn't rejected you because of your grades, then it's likely your personal statement and/or interview.

If your heart is set on a particular subject, then I would say stick with applying for the subject that you want. Going out of your way to study a subject you didn't pick usually doesn't help you in my opinion. If you just want a degree from the uni for the sake of having a degree from the uni, then I can see the point in it. Otherwise, stick to your guns.

That’s true my biggest concern is how I feel I’m falling behind I’ll be 20 starting uni my friends will be graduating that year I guess it’s a feeling which needs dealing with but it’s currently eating at me

Don't worry about your age or when your friends will be graduating. There will be lots of students at uni who will be older than you who have had gap years, or started courses, dropped out and then started a new course, or decided on a change of career. It's about doing the course that you really want to do to get into the career you want. Taking another gap year looks to be your best way forward.
