I'm in my second year of a chemistry degree and I am looking into going into data analysis graduate jobs next year but I have no internship. I have little experience with python in my modules but this summer I am going to do an online data analytics course for 3 months. I am also doing IEUK Bright Network tech and engineering virtual internship. I need some honest advice on what I should do or if it is even possible to make the switch from chem to data analytics.

You can do a masters conversion course in data analytics or data science if you want a formal qualification. Some masters also include an industry placement. You can also apply for grad schemes in data analytics. A lot of them allow graduates from any degree.
