Would KCL accept these grades?
I have an offer asking for AAC with A in maths a level and A in as further maths, would they reject me on results day were I to achieve A* in maths and B in further maths instead?

Strictly speaking you would not meet the requirements of the offer - so it would be at their discretion as to whether to accept you as a near miss applicant. Importantly though they wouldn't be required to accept you as you would have formally missed the offer. That's not to say they wouldn't, but there is an element of uncertainty as a result.
