Hey there.
I would suggest volunteering at a charity, or an animal shelter if that's your thing - it builds your skills up and ability to work with people / animals.

Another suggestion, create a brainstorm diagram, with you in the centre. Draw 5 lines from it, and write your top 5 hobbies / interests.
From those bubbles, draw 3 lines. Think of ways you can achieve those hobbies via a gap year.
EG: travel is one of my hobbies. How do you achieve travel for a gap year? Look at work experience in a travel environment / visitor attraction / free course in leisure / travel tourism.

Jump on LinkedIn, Indeed, CV Library. Keep applying, and you're bound to get something. We're all here to support you! Heck, even your name is a Star! You got this!

You've got the Arndale Centre, Trafford Centre, plus towns & cities around Manchester. Liverpool, Cheshire Oaks Outlets, Cheshire Zoo, Football stadiums. All places that would need staff to do something within.

Hope this helps in some way.
