I need AAA for my optometry course at Manchester, taking maths chem and econ. But I think I messed up econ and might get a B where as Maths I think I could get an A*. Will they still let me in with A*AB / AAB

Nobody can answer that question - not even the University of Manchester itself, as nobody knows how many firm offer-holders will meet their offer conditions. The university is obliged to confirm the place of all such candidates. Similarly, they are obliged to take all insurance offer-holders who weren't accepted by their firm choice but met their Manchester offer conditions. Only after that has happened with the university know how many places (if any) they have left. If they have some left, then they're likely to fill them using "near miss" candidates, as you would be with A*AB or AAB.

Note that in recent years the most common grades for accepted candidates (i.e. those who joined the course) were AAB (source), although that doesn't mean that'll be true this year.
