Will A-levels done years apart void my uni application?

I did a degree I had no interest in mostly because of pressure from school/parents and the desire to have a student loan so I could rent a stable place to live. Now I am looking at the possibility of doing a second degree (self funded). I have good A level grades A*AA, however those are all in humanities. For the degree I am looking at, depending on what uni I select I need either one or two A-levels in science subjects I never took. My question is if I take the one A-level now so that I meet the eligibility criteria, will universities not count it or look on my application disfavourably since it is one subject done and thus potentially easier to have a good grade than when someone does 3 subjects simultaneously. I don't know if A-levels all have to be done within a two-year timeframe to count.
This is an unusual route so you’d need to ask the unis you are thinking of applying to.
