Trouble renting a house. Owner leaves us hanging?

My gf and I have found a great house that we're interested in renting. It's above our budget, but it's really well located near 3 hospitals (my job), and it's in the countryside (which we both wanted).
However, the owner is doing our heads in already.
Since we live 7 hours away, we asked my brother and sister in law to visit the house for us on Sunday. We all agreed with 4pm.
Owner turns up half an hour late.
The owner then asks if we can have a phone call at 10:30pm on Sunday... we ask if it can be at 8:30pm Monday, for obvious reasons. She says yes.
She's late again and sends us a message at 9pm to say she's running late and will call at 9:30pm.
House is brilliant, but the owner is already showing red flags... what to do?
